In this video, we’ll show you how to make an impressive holiday dinner entree. We first rub lamb chops with dried rosemary, basil, and thyme. The chops hang out for 15 minutes to absorb the flavor of the herbs and then are quickly seared in a pan. To drizzle over the chops, we’ll make a super easy and highly flavorful sauce out of balsamic vinegar, shallots, and chicken broth. We’ll finish it off with a bit of butter for extra creaminess. Enjoy!

  2. You would want to develop more fond in the pan than is shown in the video:
    in other words, you want more crispy bits of meat and spices stuck to the
    pan when you are done cooking the meat (that is what the fond is, not Fonz
    mind you). As long as the fond is not burnt you can develop a fair amount,
    or don’t worry about a bunch of stuff sticking to the pan, as long as it is
    not getting burnt on. Then you are using the balsamic to “deglaize” the
    pan, which is picking up all those tasty bits and using them to make your
    sauce.
